Part 1 YOGURT.

YOGURT AGAINST DEPRESSION

I speak mainly about the Greek yogurt mainly, which in authentic from is tottaly different than the 'industrial' one,

Yet even industrial one, is very interesting,

Authentic Yogurt is not a creamy product.
with every cut, slowly water must gather.
and it has a towards yellow fleece above due to fats.

part 2 wine and alcool.

wine against 'foolishness' of third age,
wine for help circulation and heart.

Wine and alcool are needed after middle-age to humans in order to avoid incompetence. foolishness.
researches show that 500 ml of wine per week, (2 big glasses or 6 normal).
also it is known that a daily small quantity of 60 ml is good for heart and blood circulation,
(the olders in family and the village drink about a 50ml red wine or a 25ml alcool everyday)
Yet it is not needed for younger aged,

Anyway, becarefull with alcool even with wine,
Alcoolism is not far,
And there is not such thing like 'social drinking'
I have caught my shelf sometimes, especially at weekends, when the 'brain need' for alcool was high.
try to consume wine with family Sunday lanch or dinner,
or with weekend fun,

for weekend drinkers remember
1rst warms the heart
2nd brings the joy, the fun
3 is enough STOP
4 brings the fight
5 you are sleeping, but you do not know it
6 Death awaits

a weekly consuption of max 500 ml wine is the good meter long.
the best is 250-300 ml

part 3 Olives and oliven oil

the benefits of consuming olive-oil are known from ancient times,
the best olive-oil is a product hard to get,
cause must be from olives gathered from tree, 'smashed' to a certain distance of mm, to get a very low acidity. (0-1, 0-1,5).

Oliveoil is better than any other fats,
Although I am from North Greece, where olive trees were not so easily to grow,
we prefered olive oil when meat or fat should be 'out of dinner'

part 4 all kinds of beans

Foods based on beans or simmilar products are fantastic for 1-2 meals per week, even 5 sometimes.
all such foods have nyasise and other usefull proteins,
AND ARE NOT FATS,
so they can easily replace meat.

part 5 Fruits and Vegies

fruits must consumed each day at least one,
vegies are ideal with meat.

personally I am not a fan of fruits,
I rarely consume, 2-3 per week.
but I am fan of veggies,
I consume everyday, Ι know it is very anoying for jaws to chew like a cow,

part 6 Fish

Fish is the best food

i know the good fish is expensive,
but there are plenty kinds of fish in markets cheaper than meat,

^^Interesting. We also eat a lot of nettle, sorrel, and especially chard.

They go into pasta as a stuffing or to make our version of vegetable and cheese pies. The cheeses, instead of feta, are sheep's milk pecorino cheese and cow's milk parmigiano. I love these pies even though it's pretty time consuming, given you have to make the pastry as well.

I like them like this, but some people make them higher and might even put an egg and some mashed potatoes inside.

The above is a complete meal, imo, although it's usually served as an appetizer.

Swiss Chard and ricotta cheese ravioli:

I think using nettles and sorrel and other wild greens was more a question of needs must. You foraged and gathered whatever was free and edible.

In the spring the women and children would go out and dig up the tender new dandelion leaves and make a salad with hard boiled eggs. My mother used to put pieces of pancetta or Italian bacon in it if she had it. I always like it, although it has a slightly bitter taste. (Strangely, I don't like arugula, though.)

We eat a tremendous amount of escarole too. I don't know the Greek name. I crave it if I don't have a bowl in the house. I combine sauteed escarole (in olive oil and lots of garlic) with beans and some chicken broth and then sprinkle with grated parmigiano cheese for a dish that's half way between a stew and soup. I probably eat it twice a week for lunch in fall, winter and into spring.

I think people who say they don't like vegetables have never eaten them like this.

Escarole by what I could see are either Αντιδια, antidia Or Σγουρα Μαρουλια,

they make a fantastic salad,

yet I believe if you are about to cook the 'grass'
ραδικια ανδ ζοχιες are best (radikia Zohos)
they have a fantastic combo of bitter and sweat taste

ραδικια wild and cultivated

chard is a wilder form of beet,
with less sugars, and very small 'beet potatoe'

thanks. Chard does seem somewhat familiar to me now that I see a pucture.

Like you, I'm not much of a fruit fan. I prefer meat (fatty meat), pasta and cheese

hm If you like fats and meat, I suggest you Arab desert cuisine,
plenty of fats, lambs and sheeps with lots of garlic, or mint, spicy
or Lamb with pasta (Couscous) and almonds or dry apricots etc what dry nut/fruit you can imagine
yet they make it pretty good, for strange (to me) dishes with sheep fats.

Which of parts 1 thru 6 work best against debilitating neck spasms like I'm going through now?????!!!!
Don't want to move!!!! Man down! Man down!!!!

hmm

I will not try to pass ancient medicines, since today we have doctors, machines, and pharmacies,
the best thing is a diagnosis by a doctor,
the second is to try avoid some 'modern foods' and trust traditional,
while different kind of dishes everyday as also less industrial is best,

Not to worry! It stems from stress...believe it or not I'm a software developer and its a very stressful (albeit rewarding) role!
