The official / census figures which I found are as follows (correct me if any of these percentages are wrong):
South America:
Uruguay - 2.4%
Brazil - 0.8%
Argentina - 2.83%
Venezuela - 2%
Chile - 12.44%
Colombia - 4.31%
Paraguay - 1.7%
Ecuador - 7.69%
Peru - 25.75% - in reality probably closer to 45% are Natives*

Guyana - 10.5%
Suriname - 3.8%
French Guiana - 4%
North America:

Guatemala - 43.56%
Panama - 12.3%

But for example when it comes to Peru, out of 334 GEDmatch kits as many as 139 (41.6%) are between 0-10% genetically European. And when it comes to Bolivia out of 94 GEDmatch kits as many as 47 (50.0%) are between 0-10% European.
So it seems that at least for these two countries the official figures are underestimated, especially for Peru.
It seems that in Peru there are many people who identify as Mestizo despite in fact being pure or almost pure Amerindians.
*Here the percentage of Amerindians in Peru is given as 45% which is probably closer to the truth than the census figure:
